Woke up at 5am due to jet lag again. Went through my cookie cutters and found these little cuties. Time to listen to some rad Hawaiian tunes and bake that Easter bunny some cookies.
Craisin bunny cookies
190g plain flour
1/4tsp baking powder
1cup craisins (Dried cranberries)
150g caster sugar
1 tbsp milk
1 tsp vanilla
Sift flour and baking powder into a big bowl. Add craisins and salt. Stir to combine.
In a separate bowl beat butter and sugar until creamy.
Beat in egg, milk and vanilla essence until combined.
Now add the wet mix to the dry mix and stir again until combined.
Put all the mix into the middle of a sheet of baking paper. Roll into a handsome sausage and put in the fridge for 40mins to cool and harden.
Preheat the oven to 200degrees. Roll out the dough on a floured surface until it's about 1.5cms thick.
Cut out your bunnies with cookie cutters and place on a prepared baking tray. Make sure to leave a little gap in between the cookies so they don't push into one another once cooked.
Bake those cool dudes for 8-10 mins. Allow to cool before removing from tray. Enjoy
